Taste of Meskel: Traditional Feasts and Culinary Heritage

No major celebration in Ethiopia is complete without a rich feast, and the taste of Meskel represents one of the culinary highlights of the entire year. Following days of spiritual preparation and open air gatherings, families gather inside warm homes to break bread, share traditional holiday delicacies, and extend generous hospitality to guests and travelers.

The Centerpiece Dishes of the Festival Feast

The cornerstone of the taste of Meskel is Doro Wat, Ethiopia's famous spicy chicken stew. Slow cooked for hours with red onions, rich berbere chili powder, clarified spiced butter (niter kibbeh), and hard boiled eggs, this flavorful stew is served atop large platters of soft, tangy injera sourdough flatbread. Along with chicken stew, family tables feature rich beef kifto, spiced lamb stews, and seasoned cottage cheese (ayib).

Festive Breads and Honey Wine

Special holiday breads are baked specifically for Meskel celebrations. Chief among them is Defo Dabo, a massive round wheat bread wrapped in banana leaves and baked over charcoal until golden brown. The bread is blessed by the head of the household and sliced to serve all guests. Feasts are accompanied by carafes of Tej, the traditional golden honey wine brewed with wild hops, or home brewed barley beer known as Tella.

The Coffee Ceremony: Savoring Fellowship

Following the main feast, the traditional coffee ceremony begins. Fresh green coffee beans are roasted over glowing coals, filling the living space with rich fragrant smoke mixed with frankincense. The freshly ground coffee is brewed in a black clay pot called a jebena and served in three consecutive rounds alongside bowls of salted popcorn and roasted barley grains.

What truly defines the taste of Meskel is the spirit of open hospitality. It is customary for doors to remain unlocked throughout the holiday so neighbors, friends, and passersby can drop in to exchange holiday wishes, sample festive dishes, and share blessings. Visitors are always welcomed as honored guests.
